For this recipe, since I didn\u2019t have guavas on hand, I decided to use raspberries instead. Their rich flavor, combined with a hint of natural acidity, creates a perfect balance. But today, we\u2019re also adding a special ingredient that will give your jam a unique twist\u2014one you\u2019ll want to use again and again: fresh rosemary.<\/p>\r\n

Prep the Raspberries<\/p>\r\n
Rinse the fresh raspberries thoroughly. Place them in a large pot and add the sugar. Stir until all the berries are coated evenly.<\/p>\r\n<\/li>\r\n<\/ul>\r\n<\/li>\r\n
Add Lemon & Rosemary<\/p>\r\n
Pour in the lemon juice and toss in the rosemary sprig. The lemon helps enhance the raspberry flavor and naturally thickens the jam.<\/p>\r\n<\/li>\r\n<\/ul>\r\n<\/li>\r\n
Cook the Mixture<\/p>\r\n
Bring the mixture to a boil over medium-high heat, stirring frequently to prevent it from sticking to the bottom. As it thickens, keep an eye on the texture. Once it reaches a jam-like consistency, remove it from the heat. Be careful not to overcook it\u2014this can dull the vibrant red and turn it brownish.<\/p>\r\n<\/li>\r\n
